Quindin – (Coconut tartlets)

absolute heaven...

You’ll need:

Ingredients:

250g granulated sugar

200g of grated coconut

1Tbsp butter

5 egg yolks

2 egg white beaten to a firm peak

To prepare:

1 Preheat oven to 180C

2 Combine in a bowl the sugar, coconut and butter. Mix well and then add the egg yolks one at a time.

3 Add the egg white and mix well.

4 Divide the mixture into the 12 greased muffin tray.

5 Place the muffin tray in a large roasting tin, fill it with boiling water to about 1 inch deep (bain-marie). The muffin tray should not float.

6 Bake for 30 minutes or until slightly golden brown, on the top of the cups.

7 To release the little tartlets from the mould turn them upside down (coconut flakes on the bottom). Refrigerate and serve.

Makes 12 mini tartlets

Isabel’s Lazy Chocolate Cake is deliciously light and quick to make…  this is the most dangerous chocolate cake ever, because now you’re  only ever 5 minutes away from a lip-smacking chocolate cake at any time of the day or night!

No artificial Preservatives, Flavours or Colours.
You will need:
1 Pack 115g of Isabel’s Lazy chocolate cake
1 medium egg
2 Tbsp (or 30ml) Vegetable oil
3 Tbsp (or40ml)  milk or milk alternative
Few drops of vanilla extract.
Chocolate chips  (optional, but really nice)
1 Large tea or coffee mug

How-to-prepare:

  1. Stir Isabel’s Lazy chocolate cake mix milk, oil and egg in a bowl until mixed well and lump free.
  2. Add the chocolate chips (if using) and vanilla extract and mix again.
  3. Pour the cake mix in a large mug filling up to 3 thirds of the mug leaving plenty of space for the cake to rise.
  4. Place the mug in the microwave and cook for 1 minute and 30 seconds at 900 watts (high).

Natural, Delicious, Convenient...

The cake will rise over the top of the mug, but don’t be alarmed! Allow to cool a little, and tip out onto a plate easing the sides with the help of a knife.

Serve: This  recipe can serve 3 if you want to feel slightly more virtuous – cut the cake into thick slices garnish and serve.

You’ll not believe this cake is gluten free …
