Barbecued chicken

Light up your fire!


1kg chicken thigh, drums or wings

2 Tbsp of olive oil

1 large garlic clove crushed

Juice of 1 large lemon

Freshly grounded black pepper to taste ( I like lots!)

Salt to taste

1 Clean chicken, rub thoroughly with salt and soak in lemon juice, garlic, black pepper and oil.

2 Preferably leave to marinate overnight, but 2 hours get plenty of flavours going through the meat.

3 Place the chicken on the barbecue or grill and roast slowly. Baste with the marinate juice during roasting.

Serve with white rice, salsa vinaigrette and farofa.
